CHAPTER ONE

INTRODUCTION

1.1 BACKGROUND OF THE STUDY

A simple definition of a baking oven, which is a sophisticated simultaneous heat and mass transfer process device frequently used in the food industry, is a thermally insulated chamber used for heating, baking, cooking, or drying food ingredients (Mondal and Datta, 2008). The driving force for heat transfer during baking is the temperature gradient, whereas the driving force for mass diffusion is the concentration difference. Both of these processes occur simultaneously within the food product from the outer to the inner part of the food material, and the moisture diffusion in the food material happens primarily by convection and conduction and less by evaporation (Basil and Blessent, 2014). The primary factors used to categorize ovens are their operational mode (batch or continuous), heating source (electrical or hot air heating), and heating mode (conductive, convective, radiative). Due to their process flexibility for various bread goods, electrical heating ovens are frequently employed for batch baking (Chhanwal et al., 2012). The second most popular staple food after rice, bread is formed from wheat flour dough and fermented with yeast before being proofed and cooked in an oven. It is now consumed on almost every continent (Abdelghafor et al., 2011; Komlaga et al., 2012). The bakery and confectionery industry in Bangladesh has nearly mastered self-sufficiency in terms of satisfying domestic demand and established a name for itself on the global stage, luring more local investors, particularly the big conglomerates, to produce high-quality goods and import alternatives and invest their money in the company, according to insiders in the sector.

1.2 STATEMENT OF THE PROBLEM

Due to frequent use and great market demand, an electric baking oven with three main components—an insulated box, heating elements, and wires or controls—was chosen as the study's subject. The heating element is integrated with a thermostat to control the rate of heat generation in the system, and the control or cables regulate the current flow to the heating element to prevent the supply of excess heat and prevent over- roasting or burning. The insulator box serves as the housing element where the items to be baked stay. The process of heat transfer serves as the electric oven's fundamental operating concept (Mondal and Datta, 2008). In order to achieve improved energy efficiency, Genitha et al. (2014) devised a residential gas oven that required less energy, money, and time to bake. Adegbola et al. (2012), on the other hand, developed a low-cost residential electric bake oven that included a blower for increased effectiveness. The primary design factors were taken into account during fabrication as other researchers had stressed (Akinnuli and Olugbade, 2014; Akinnuli et al., 2014; Mohammed et al., 2015; Ogedengbe et al., 2015; Olugbade et al., 2018).

1.3 AIM AND OBJECTIVES OF THE STUDY

The study seeks to construct charcoal oven. The objectives of the study are:

  1. To construct a charcoal oven
  2. To implement the charcoal oven
  3. To test the performance of the charcoal oven

1.4 SIGNIFICANCE OF THE STUDY

This study will be of immense benefit to other researchers who intend to know more on this topic and can also be used by non-researchers to build more on their work. This study contributes to knowledge and could serve as a bench mark or guide for other work or study. It avails individuals with information about construct charcoal oven.

1.6 DEFINITION OF TERMS

CHARCOAL: Charcoal is a lightweight black carbon residue produced by strongly heating wood in minimal oxygen to remove all water and volatile constituents

OVEN: An oven is a tool which is used to expose materials to a hot environment. Ovens contain a hollow chamber and provide a means of heating the chamber in a controlled way. In use since antiquity, they have been used to accomplish a wide variety of tasks requiring controlled heating.
